Guest guest Posted December 21, 2007 Report Share Posted December 21, 2007 just came up with these today and I haven't a clue if they are edible since I can't do sugar, but they smell good and are really pretty.... 2 packages Nestles White Chocolate morsels 6 tablespoons butter (I use butter, not margarine, in candy) 8 ounces candied cherries, chopped 8 ounce jar maraschino cherries, well drained and chopped 1/2 cup heavy cream 16 ounces sweetened flaked coconut 2 boxes (sort of....) confectioner's sugar Chop cherries and put in large mixing bowl. Stir in a bit less than half of the coconut, Trust me, you need the room.) Melt butter and white chocolate together, then add heavy cream, mixing until smooth. Stir the melted chocolate mixture into the cherry/coconut mixture, then add as much confectioner's sugar as needed to make the mixture hold together but still be tacky and not firm. (As the chocolate hardens, so will the candy) With this amount of candy, I used my hands to knead in the sugar. Chill mixture in fridge for about half an hour. Put some of the remaining coconut on a plate and roll tablespoons of candy mixture into balls, then rolling them in coconut. Refrigerte balls until firm, then store in air-tight containers. I ran out of coconut with 4 balls to go, so did those in confectioner's sugar. Makes 72. Love to all, Jeanne in GA Never miss a thing. Make your homepage.
