Guest guest Posted December 21, 2007 Report Share Posted December 21, 2007 After the frost and the raccoons were done, our pear tree harvest was exactly 4 pears! 4 medium bosc pears, cored and thinly sliced 3 granny smith apples, peeled, cored and thinly sliced 2 Tbsp light brown sugar 1/3 cup finely chopped almonds 1/2 tsp. cinnamon 1/4 tsp nutmeg 2 Tbsp rum (I didn't have any) 1 tsp. vanilla extract Topping: 2 Tbsp Earth balance, melted 1/2 Cup whole wheat pastry flour 1/2 cup wheat germ 2 Tbsp light brown sugar 1/4 tsp cinnamon Preheat oven to 350 degrees F. Lightly oil 9x9 inch baking dish. In mixing bowl combine the fruits, brown sugar, almonds, cinnamon, nutmeg, rum and vanilla. Pour into baking dish. In small bowl, combine the melted margarine with remaining topping ingredients and toss to coat. Sprinkle evenly over fruit mixture.
