Guest guest Posted December 21, 2007 Report Share Posted December 21, 2007 6 medium beets, peeled and cut into chunks 2 1/2 tablespoons olive oil, divided 1 teaspoon garlic powder 1 teaspoon kosher salt 1 teaspoon black pepper 1 teaspoon sugar 3 medium sweet potatoes, cut into chunks 1 large sweet onion, chopped Preheat oven to 400 degrees F (200 degrees C) In a bowl, toss beets with 1/2 tablespoon olive oil to coat. Spread in single layer in roasting pan. Bake beets 15 minutes in preheated oven. While beets are cooking: Mix remaining 2 Tablespoons olive oil, garlic powder, salt, pepper and sugar in large resealable plastic bag. Place sweet potatoes and onion in the bag. Seal bag, and shake to coat vegetables with oil mixture. Add sweet potato mixture to beets in pan and mix well. Continue baking 45 minutes, stirring after 20 minutes, until all vegetables are tender. I think the sugar could be omitted - it was sweet enough. And I had more sweet potatoes than beets so I switched the amounts on those.
