Garlic Sauteed Spinach and Onions - Diabetic

Author: Betty Wedman-St. Louis, Ph.D., R.D., C.N.S.

 

1 tsp olive oil

1 tsp butter or margarine

3 c chopped fresh spinach leaves, stems removed

1 onion, chopped

1 clove garlic, minced

 

Heat olive oil and butter in saucepan over medium

heat. Add spinach, onion, and garlic. Saute until

spinach is limp and tender. Serve hot.

 

Makes 2 Servings.

 

Dietary Exchanges: 1 Vegetable and 1 Fat

 

Nutrients Per Serving:

67 Calories

1 g Protein

6 g Carbohydrates

7 g Fat

31 mg Sodium

3 mg Cholesterol (with butter)
