Yukon Gold or baking potatoes, peeled and cut in chunks 1/2 lb. parsnips, peeled and cut in chunks 1/2 lb. carrots, squash or turnips, peeled and cut in chunks 2 lbs. sweet potatoes, peeled and cut in chunks 2 tbsps. olive oil 1 tsp. salt 1 small bunch chives Combine potatoes, parsnips and carrots in a large pot and cover with plenty of cold water. Bring to a boil and cook for 10 minutes. Add sweet potatoes to pot and cook all vegetables for 10 to 15 minutes longer, or until tender. Drain vegetables well. Add oil and salt and mash coarsely. If mixture is too thick, add a little hot milk. Taste and adjust seasonings if necessary. Spoon mashed vegetables into a serving dish. Cut chives into 2-inch pieces over vegetables.
