Do you have a good recipe for vegetarian pot pie thatyou can share?

This recipe is called Wynelles Vegetable pot pie, I think I found it in the

Laurel's Kitchen cook book years ago.

 

1 Pie crust, I always buy one since my pie crusts never come out.

 

 

Filling:

1 large onion chopped

1 TBS veg oil

2 med potato diced

1/2 tsp sweet paprika

salt and peper

1/2 tsp dried basil

1/2 tsp dried marjoram

1/2 cup diced red pepper

4 cups sliced mushroom ( I never add these, I don't like mushrooms)

1/2 cup green peas

1/2 cup corn

 

In large saucepan, saute the onions in the oil until soft. Add the carrots,

potatoes, paprika, basil and marjoram. Cook covered on medium heat stirring

frequently for about 10 minutes. Stir in bell peppers, mushrooms,peas and

corn, add salt and pepper to taste. Cover and continue to cook until carrots

begin to become tender 5-10 minutes.

 

Roux

 

2 TBS butter

2 TBS flour

1 cup milk dairy, soy, rice)

1 tsp Dijon mustard

1/4 tsp nutmeg

2 cups grated cheese

 

Melt butter add flour and stir constantly on low heat for 3-5 minutes.

Whisk in the milk, mustard and nutmeg. Continue to stir on low heat until

mixture is lightly thickened, do no boil. Remove from heat add the cheese.

 

Topping

 

1 TBS butter

2/3 Cup bread crumbs

1/4 tsp marjoram

1/4 tsp dried basil

dash sweet paprika

 

Preheat oven to 375 degrees

Melt butter on low heat add bread crumbs and herbs, stir to coat with butter

and saute for about 3 minutes until lightly crisped

 

Assemble Pie

 

spoon drained vegetables into pie crust, pour the roux over the veg filling

and poke a spoon down into veg in several placed. Sprinkle bread crumbs on

top and bake for 40 minutes
