Hi ,

I am an indian so here goes derivaties of " peas and cottage cheese curries "

 

MY EXPRESSIONS OF " MUTTER-PANIR "

 

1.RECIPE ONE (PUNJABI STYLE)

Cottage Cheese and Shelled Peas in equal proportions.

A balance of (proportionate) fine chopped onions and fine chopped tomatoes.

Any spice that you fancy to your taste(pepper,chilly powder,paprika.etc

combination or seperate). A balance of (proportionate) fine chopped garlic

to the peas and the cottage cheese.

Oil to cook.

Method.Heat oil.Saute garlic ,add onion.Saute soft Add the spice .Add

tomatoes.

Saute and let cook till the mixture leaves oil.Then add the peas cover and

cook.

Finally add prefried cottage cheese cubes.If the preparation has become dry

add some water.Simmer till the aroma of the ingrediants has intermingled.

The consistancy has to be semi liquid.Not dry or watery.

 

2.RECIPE TWO(GUJRATI STYLE)

Cottage Cheese and Shelled Peas equal proportions.

Tomato paste as required.Any flavourant or spice as you please.

Plain Yogurt. Bengal Gram flour or Cornflour as a sauce binder.

 

Method:Cook Peas seperately.Stir fry Cottage cubes seperate.

Toss both together and add the flavourant or spice.Cook it dry.

Make a sauce of the tomato paste and yogurt(hang it in

kerchief) and make less watery

Slow cook this sauce for a short time after having added and

blended

the flour.Do not overcook as it may break.But ensure that the

gram or corn

flour gets cooked.Finally add the pea and cheese to this.Stir

..One simmer and serve.

 

3.RECIPE THREE( MY STYLE)

Cottage Cheeese and Shelled peas to cook very well.

Make a seperate gravy or curry with sliced onion,cilantro,turmeric,green

tobasco and garlic.

When you mix the above ingrediants minus the peas and the cottage

cheese,it

should form an emulsion.Cook this emulsion till it renders an aroma.Then

add the

well cooked peas and cottage .Simmer till it slightly thickens
