Guest guest Posted December 16, 2007 Report Share Posted December 16, 2007 Tempeh is a traditional Indonesian fermented soyfood made from split soybeans, water and a special bacteria. Often used as a meat substitute, it is high in protein and when made traditionally, a source of vitamin B12. It has a rather strong flavor that takes some people awhile to appreciate. It is nothing like tofu and you cannot substitute tofu and get the same effect. Depending upon how the tempeh is used, you may often substitute tofu in the recipe and still have something delicious. (For example, if the recipe is a marinated tempeh, you can marinate the tofu and still get a delicious dish but you are missing the texture and flavor the tempeh imparts.) Tempeh is usually available in the refrigerated section of the natural food store near the tofu. Temehworks and White Wave are two of the major commercial producers.
