Gluten Free Kooky Cake This cake doesn't rise as well as some, but it has a nice texture. If you want, mix it right in the baking pan by mixing the dry ingredients, making three wells and filling one with the oil, another with the vinegar and the third with the honey and vanilla. Pour water on top and mix well. 1/2 c Soy Flour 3/4c Honey 1 c Brown Rice Flour 5 Tbs Extra Virgin Olive Oil 3 Tbs Carob Powder 1 tsp Vanilla 1/2 tsp Sea Salt 1 tsp Apple Cider Vinegar 1 tsp Baking Soda 3/4 c Water 1. Preheat oven to 350º. 2. Line a 9 " x 9 " square pan with parchment paper. Oil and flour the paper. 3. Mix dry ingredients together in large bowl. 4. Mix honey, oil, vanilla and ½ c water together in another bowl. 5. Stir in dry ingredients until completely blended. 6. Add vinegar to ¼ c water 7. Stir quickly into batter, just until mixed. Do not over mix and work quickly. 8. Pour batter into prepared pan. 9. I know my middle child avoids dairy and my son-in-law and daughter-in-law limit their dairy intake but I thought they wouldn't mind the semolina cake. I have a ton of recipes for sweet breads and cakes, all non-dairy and whole grain, mostly vegan, but some use some unusual ingredients. I didn't know how involved you wanted to get, so I sent one of the simple ones that goes over well with my friends and family.
