Guest guest Posted December 15, 2007 Report Share Posted December 15, 2007 * Exported from MasterCook * South African Garlic Zucchini Soup - 3 pts, 15g carbs, 2g fiber Recipe By :South African Gourmet Food and Wine by Rosen & Loong Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Medium Shallots -- Chopped 4 Cloves Garlic -- Finely Chopped 2 Medium Leeks -- Sliced 2 Medium Onion -- Chopped 2 Tablespoons Butter 2 1/4 Pounds Zucchini -- Thinly Sliced 8 Cups Boiling Water 4 Cubes Bouillon 1 Teaspoon Pepper 4 Medium Red Potatoes -- Peeled And Sliced 8 Ounces Sour Cream -- Optional 3 Tablespoons Green Onion -- Chopped Salt -- To Taste Saute shallots, garlic, leeks and onions in butter in large pot until tender. Add zucchini, water, bouillon, pepper and potatoes. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Season with salt. Add half of mixture to food processor or blender and process until smooth. Pour back into pot with unprocessed soup. Mix well. To Serve: Top with sour cream and green onions.
