I haven't made them in a long time, but they were good enough to warrant getting into my recipe box. Amy Tart Lemon Squares 1 C flour 1/2 C powdered sugar 1/4 C plus 1 T chilled margarine. Cut margarine into small pieces, combine with flour & powdered sugar. Press this mixture into an 11 x 7 x 2 baking pan coated with cooking spray. Bake at 350º for 20 minutes. Combine with whisk until blended: 1 C sugar 2 T flour 1 1/2 t grated lemon rind 1/2 t baking powder 3 egg whites 1 egg Stir in: 7 T fresh lemon juice 1/4 t butter flavoring Pour mixture over crust, bake at 350º for 20 minutes or until set. Cool.
