Guest guest Posted December 15, 2007 Report Share Posted December 15, 2007 * Exported from MasterCook * Seitan a là Greque Recipe By :The Native Foods Restaurant Cookbook By Tanya Petrovna Serving Size : 4 Preparation Time :0:00 Categories : Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 12 oz. seitan -- thinly sliced 1 medium tomato -- chopped 2 cloves garlic -- chopped 8 pitted kalamata olives -- sliced (8 to 10) 6 artichoke hearts -- sliced 4 oz. Quick Tofu Feta (recipe follows) 1 tsp. sea salt 1/4 teaspoon black pepper 1/4 cup chopped fresh parsley Lemon slices for garnish In skillet heat olive oil and saute seitan until lightly browned. Add tomato and garlic and simmer 1 minute. Stir in the rest of the ingredients and mix lightly. Garnish with lemon slice and a little freshly chopped parsley. (Serves 4) Serving Suggestions: Serve with steamed greens and grain of your choice. Quick Tofu Feta 4 oz. tofu, chopped in ½ inch cubes ¼ cup olive oil ¼ cup lemon juice 1 tsp. sea salt ¼ tsp. dried oregano Combine all ingredients in small bowl and let marinate at least 20 minutes.
