Vegan Sweet and Sour Sauce - 4 pts

1 cup apple juice

1/3 cup soy sauce

2/3 cup water

1/3 cup maple syrup

1 tablespoon miso

1 tablespoon whole grain mustard

1/3 cup rice vinegar

2 slices ginger -- pressed or grated (2

to 3)

3 tablespoons kuzu

 

Dissolve miso in water.

Put all ingredients in saucepan except one half cup of

apple juice and the kuzu.

Place over high heat.

Dissolve the kuzu in remaining apple juice.

Add to saucepan, stirring until mixture thickens and

comes to boil (2-3 min.)

Remove from flame.
