Jim's not a fan of any squash but he loved this recipe!

 

Potato Boats

 

2 large Idaho or russet potatoes, baked and slightly cooled

1/2 pound winter squash (hubbard, butternut etc.) (I used acorn)

2-3 Tablespoons olive oil

1/2 teaspoon ground cumin

Sea salt

Freshly ground pepper

Paprika

 

While potatoes are cooling, cut skin from squash and cut into small

cubes. You should have 3/4 to 1 cup. Place in vegetable steamer and

steam over medium heat until very soft. Preheat broiler.

 

Cut potatoes in half lengthwise and gently scrape out pulp without

tearing skins.

 

Combine potato pulp, squash, all but 2 teaspoons olive oil, cumin,

salt and pepper. Mash until you have a creamy puree.

 

Fill potato skins with potato-squash mixture. Brush with reserved

oil, and dust with paprika. Place under broiler for 10 mins or until

lightly browned.
