Jeanne sweet potatoes

Jeanne I never have good luck with them. Russets are really bad when I thaw

them. Do you freeze russets?

Recently I was given 50 pounds (about 23 Kg) of sweet potatoes and peeled,

mashed and froze most of them in freezer bags, so yes, you can freeze them after

mashing. They do last a good long time in cool storage, thankfully. Hope this

Nope, I never freeze white potatoes, only sweet potatoes. White potatoes get so

mealy icky when frozen, even in veggie stews. The sweets do ok though when

cooked and mashed. I even have some sweet potato pie filling frozen in the

freezer so all I have to do is slit the freezer bag and put it, frozen, in the

crust and pop it in the oven. (Pour prepared filling in pie pan which you have

sprayed with Pam or something similar, freeze then pop out of the pan and put in

plastic freezer bags.) I do the same with veggie pot pie, pumpkin, apple and

berry pies. That way it is simple as anything to roll out a pie crust and pop

the frozen pie filling in and bake. I usually have pie crusts frozen and ready

to go too, but the grandson discovered that a frozen pie crust with butter and

jam or cinnamon and sugar, cooked in the oven, is a good treat at 3 in the

morning. (The little skinny pig ate about 10 pie crusts in one week...I could

have screamed.)
