White potatoes get so mealy icky when frozen, even in veggie stews. The sweets do ok though when cooked and mashed. I even have some sweet potato pie filling frozen in the freezer so all I have to do is slit the freezer bag and put it, frozen, in the crust and pop it in the oven. (Pour prepared filling in pie pan which you have sprayed with Pam or something similar, freeze then pop out of the pan and put in plastic freezer bags.) I do the same with veggie pot pie, pumpkin, apple and berry pies. That way it is simple as anything to roll out a pie crust and pop the frozen pie filling in and bake. I usually have pie crusts frozen and ready to go too, but the grandson discovered that a frozen pie crust with butter and jam or cinnamon and sugar, cooked in the oven, is a good treat at 3 in the morning.
