Quick Pinto Bean Supper

1 8-ounce can pinto beans, drained well

1 tomato, chopped

1 green onion, sliced (green ends included)

Couple of handfuls of shredded cheddar cheese

Tortilla chips

 

 

 

Dump beans into microwave-safe bowl. Top with tomato,

onion and cheese. Cover lightly with paper towel.

Microwave on high for 2 minutes.

 

Sprinkle with crunched-up tortilla chips.

 

Serves 1.

 

To freshen stale crackers or chips, lay them between

paper towels and microwave on high 30 seconds.
