I have a " recipe " which uses up *two* sets of leftovers: boiled rice one day, boiled potatoes the next, potato-rice cakes the next! Basically, mix roughly equal parts of boiled potatoes and boiled long- grain rice (if not 50:50 then err to excess of rice) with finely chopped onion (small amounts of other vegetables such as peas or cooked peppers) and mixed herbs to your fancy (a little pepper, a little bacon substitute, a little ... whatever *but* not to more than 10% of the whole). An egg or two helps mould the cakes but is not essential. Mix the whole lot up by hand; take a handful and roll gently in flour of your choice, flatten to about 2cms thickness. Grill (moderate heat) for 10-20 mins - until cooked. This is a very versatile (modify it as you like) " recipe " which is quick (if messy) to make! > when I had leftover rice or pasta I feed it to the birds.
