Question about dried beans

Hi everyone:

 

 

 

As a relatively new vegetarian and diagnosed T2 Diabetic, I'm looking for

ways other than Tofu to add some more protein to my diet.

 

 

 

I have a pantry full of dried beans, peas, and lentils that I use for soups

and other things.

 

 

 

What I'm wondering is if any of the other dried beans in particular can be

used in salads, beans like pinto, black-eyed beans and others. I've used

canned black beans in some of salads and just love them.

 

 

 

I apologize if this is a dumb question. I'm still finding my way around my

two new worlds.

Hi Cheri!

 

As a former T2 Diabetic, YES to beans!!

 

I eat salad every day and I pretty much always include beans. My

favorites are kidney and pinto, but I also use garbanzo, black beans,

heck, pretty much any type of bean including some beans I bought in

Brazil that aren't native around here. (So I don't even remember what

they are called.)

 

I don't use lentils in salads because they tend to get mushy, but I put

lentils and split peas into soups.

Funny you should ask about the beans... We like to put black beans in rice

with southwestern veggies and taco seasoning to make rice burritos - my 16

year old loves them. And we just had taco salad for lunch - 2 packets of

Boca crumbles, a can of kidney beans drained and taco seasoning, served over

chips with grated cheese, plain fat free yogurt, shredded lettuce and

homemade salsa for lunch and he was just raving about it.

I love garbanzo beans in salad.

Almost any dried beans can be used in salads. I love garbanzo beans,

pinto beans, black-eyed peas, anasazi beans, and aduki beans in salads.
