Greek Beans and Eggs

 

2 large eggs

1 tbsp. chopped fresh parsley

1/4 tsp. crushed dried oregano

2 tbsps. chopped green onions

3/4 cup canned or homemade black-eyed peas, drained

1/3 cup crumbled feta cheese

1/4 tsp. salt

1/8 tsp. ground black pepper

 

Beat together eggs, parsley and oregano. Spray a

non-stick skillet with vegetable cooking spray. Heat

over medium heat and add green onions; sauté for 30

seconds.

Stir in black-eyed peas. Add egg mixture and cook,

stirring occasionally, until eggs are just set, about

5 minutes. Add feta cheese and stir to blend. Season

with salt and pepper before serving. Serves 4.
