Guest guest Posted December 8, 2007 Report Share Posted December 8, 2007 * Exported from MasterCook * Linguine with Zucchini, Tomatoes and Mint - 7 pts Recipe By :Weight Watchers New 365 Day Menu Cookbook Serving Size : 4 Preparation Time :0:00 Categories : LowFat (Less than 30%) Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces linguine 2 teaspoons olive oil 1/2 cup chopped onion 3 garlic cloves -- minced 3 medium zucchini -- quartered lengthwise, then thinly sliced 1 1/2 cups canned crushed tomatoes 1 tablespoon balsamic vinegar 1/2 teaspoon salt 1/4 teaspoon granulated sugar 1/2 cup minced fresh mint leaves 3 ounces freshly grated Parmesan cheese In large pot of boiling water, cook linguine 8-10 minutes, until tender. Drain, discarding liquid; set aside. Meanwhile, in large nonstick skillet, heat oil; add onion and garlic. Cook over medium-high heat, stirring frequently, 5 minutes, until onion is softened. Add zucchini; cook, stirring frequently, 5 minutes, until softened. Add tomatoes, vinegar, salt and sugar to vegetable mixture; cook, stirring frequently, 5 minutes, until mixture is slightly thickened. Stir in mint; cook, stirring frequently, 1 minute. Add cooked linguine; cook, tossing constantly, until heated through. Divide linguine mixture among 4 plates; top each portion with one-fourth of the cheese.
