zucchini the size of a bat

I have done this many times with huge zucchini squash. Cut in half lengthwise,

scoop out quite a bit of the inside and dice. Saute onions, garlic,, mushrooms,

diced squash, bell pepper until tender firm. Now add some cooked rice and a

little pasta or pizza sauce. Oil the outside of the squash shell and, place on

a baking sheet, stuff with the mixture. Spoon a little more sauce over the top

and sprinkle some herbs. Cover with foil and bake on 350 degrees. Not sure,

maybe 45 mins to an hour. This is really good, just slice and serve.

I am having some girlfriends over for dinner tomorrow. And I have this

zucchini the size of a baseball bat that I would like to use. However I

have no idea what to do with it to make it the main part of the meal. Also

one of my dinners is allergic to wheat, another can't tolerate pasta at all,

and the other can't do any cow dairy.

 

I was pondering a thick tomato based soup with some tofurkey italian sausage

cut up in it. Parmesan on the side.

 

I was also pondering if there was some indian recipe I could make out of

it. We all love indian food and can do rice.

 

Help! Recipes please!!

too funny, i saw the title of the thread, and immediately thought: bumblebee

bat? samoan

fox bat? vampire bat? (i teach environmental science)...

 

i personally love my zucchini of the baseball bat size sliced up, sprayed w/ a

little olive oil

and roasted with some squash and carrots, and served over rice. simple but

elegant.
