LeftOver Quorn Tamale Squares Corn Bread: 1 8 to 14 ounce package non-lard corn bread mix Filling: 2 teaspoons vegetable oil 1/3 cup chopped green pepper 1/2 cup onion, chopped 4 ounces minced leftover Quorn roast 1 15 ounce can black beans, rinsed, drained 1 14 ounce can tomato sauce 1 1 1/4 ounce package taco seasoning mix Topping: 1/2 cup cheddar cheese, shredded sour cream salsa, if desired Prepare corn bread mix according to package directions for 8-inch square pan. Meanwhile, in 10-inch skillet heat oil; add green pepper and onion. Cook over medium heat, stirring occasionally, until vegetables are crisply tender (2 to 3 minutes). Add Quorn, continue cooking (2 or 3 minutes). Stir in beans, tomato sauce and seasoning mix. Continue cooking over medium heat until mixture is heated through and bubbly (4 minutes). To serve, cut hot corn bread into 6 pieces. Place on individual serving plates; top each with 1/2 cup hot filling. Sprinkle with cheese. Serve with sour cream and salsa. Serves 6.
