In the cooler weather, I make a big pot every weekend and we eat on it all week and I usually freeze half in the very beginning to keep for another time. I'd have to say anything with cabbage. I usually do not use a recipe unless I need some seasoning suggestions or new ideas. I start with a base of veggie stock, celery, onion, peppers, garlic and tomato. Then come whatever veggies I have to am hungry for . . . but cabbage is usually one of them. Then I add beans and lots of them too. All kinds . . . navy, pinto and even baked vegetarian beans. Yum! How about a Mushroom Barley . . . Black Bean . . . or if you do dairy, Potato Soup . . . Sauerkraut Soup from the group's files is excellent! Here's another of my Favorites: 12 c. Veggie Broth 3 large onions, chopped 3 T. olive oil 6 large potatoes, cubed (I use a mix of white and sweet) 2 large carrots, sliced or chopped 2 large parsnips, sliced or chopped 1/2 c. dried wild greens (I could never find this so I use spinach) 1/2 c. dried seaweed, cut into squares Saute onion in olive oil til tender. Add stock and all veggies except for greens and seaweed. Simmer til well done. Add greens and seaweed and cook for a bit longer. Season accordingly.
