Guest guest Posted November 30, 2007 Report Share Posted November 30, 2007 2 cans diced tomato 2 ½ cups tofu, chopped 2 tablespoons soy sauce 1 ¾ coconut milk 1 tablespoon lemon juice 1 teaspoon curry powder 2 tablespoons cilantro or coriander leaves, chopped (optional) Place half the tomatoes and half of the tofu in a blender and blend smooth with the soy sauce, half the coconut milk, lemon juice and curry powder. Now transfer the soup to a saucepan. Blend the remaining tomato and tofu until smooth, and add to pan. Add 1 tablespoon of the cilantro (if desired) and slowly bring to a boil uncovered. Turn down the heat and let the soup bubble gently for 10 minutes before serving with the remaining cilantro/coriander leaves scattered on top.
