Spicy tomato and tofu soup

2 cans diced tomato

2 ½ cups tofu, chopped

2 tablespoons soy sauce

1 ¾ coconut milk

1 tablespoon lemon juice

1 teaspoon curry powder

2 tablespoons cilantro or coriander leaves, chopped (optional)

 

Place half the tomatoes and half of the tofu in a blender and blend

smooth with the soy sauce, half the coconut milk, lemon juice and

curry powder.

 

Now transfer the soup to a saucepan.

 

Blend the remaining tomato and tofu until smooth, and add to pan.

 

 

Add 1 tablespoon of the cilantro (if desired) and slowly bring to a

boil uncovered.

 

Turn down the heat and let the soup bubble gently for 10 minutes

before serving with the remaining cilantro/coriander leaves scattered

on top.

This sounds really good and easy too – can I just check, is it 1 ¾ cups of

coconut milk?

What size can of tomatoes? Also, when you blend the second time, you state to

blend half the tomatoes and half the tofu. Should you blend in the remaining

coconut milk at that point too?
