Guest guest Posted November 28, 2007 Report Share Posted November 28, 2007 * Exported from MasterCook * Noodle Pancakes - 10 pts Recipe By :Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces fine egg noodles 2 tablespoons unsalted butter 1 small white onion -- minced 2 large eggs -- lightly beaten salt and pepper -- freshly ground, to taste 1/4 cup canola oil Cook the noodles according to the package directions until al dente, " firm to the bite " , and drain well. In a small skillet, melt the butter over medium heat, then add the onion and cook, stirring, until transperant. Combine the drained noodles and onion in a medium-sized bowl, add the eggs, season with salt and pepper, and stir to blend well. Hat the oil in a large, heavy skillet over medium heat. With an oversized spoon, drop the noodle mixture by the spoonful into the pan and flatten slightly with the back of the spoon to form thin pancakes. Fry until crisp and golden brown, then turn over to cook the other side, 3 to 5 minutes total. Drain on paper towel and serve immediately. Makes about 18 pancakes.
