Guest guest Posted November 28, 2007 Report Share Posted November 28, 2007 I just made this for lunch and it was really good - my son ate 6 tacos! 1 can black beans, drained and rinsed 1 can Mexican style diced tomatoes 1/2 medium onion, chopped 1 cup uncooked rice Salt Pepper Chili powder Olive oil Saute onion for a couple minutes in olive oil in a medium saucepan. Add rice and continue sauteing for a couple minutes more. Add in the drained beans, the tomatoes and 1 1/2 cans of water. Season with salt, pepper and chili powder to taste (you could use taco seasoning but I didn't have any). Bring to a boil and reduce heat to simmer. Serve on tortillas or taco shells with shredded cheese, lettuce, tomato, onion, sour cream (or plain yogurt) and taco sauce.
