Rutabagas-Carrot Mash with Lemon

I had no idea how to eat a rutabagas

umtil I discovered this easy excellent recipe.

I will have to try them again in more recipes.

Rutabagas-Carrot Mash with Lemon

 

rutabagas 2 or 3

carrots 2 or 3

lemon

salt

butter, optional

 

Peel rutabagas and carrots. Cut them into 1/2 inch

chunks and place in a pot. Cover with water and add a

goodly amount of salt (like half a teaspoon or more,

not just a pinch). Bring to a boil then reduce heat

and simmer 10 to 15 minutes, until they’re tender and

easily pierce with a sharp knife. Drain well and mash

with a potato masher, or if you like a smoother

consistency, use a food processor or blender. Squeeze

in a bunch of fresh lemon juice and stir to

incorporate. Serve just like that, or add some butter

or you can let people add butter at the table.

You can use them in any turnip recipe. I love them mixed with mashed

potatoes, or even by themselves, mashed with salt and pepper. You can also

slice them raw and they taste like a radish.
