Peanut Butter Scones With Lemon Custard

I made these yesterday for a late breakfast. Very

tasty!

Peanut Butter Scones With Lemon Custard

 

2 cups flour

2 1/2 tsps. baking powder

1/2 tsp. salt

2 tbsps. sugar

1/4 cup peanut butter

1/2 cup milk

1 egg, well beaten

1/4 cup margarine

1 tbsp. cornstarch

1/2 cup lemon juice

1 cup sugar

1 egg, well beaten

 

Peel from lemon, grated Combine ingredients. Cut in

peanut butter till finely blended. Add milk and egg.

Stir till mixture is a soft dough. Knead lightly on

floured board. Roll out into 1/2 inch thick rectangle.

Cut dough into 18 triangles. Bake on a cookie sheet at

425 degrees for 12 minutes. To make custard, combine

remaining ingredients in a pan over low heat. Cook

till thick, stirring constantly. Spread over warm
