Italian Pasta Stir-Fry

 

1 8 oz. pkg. linguine, uncooked

1 tablespoon olive oil

2 large garlic cloves, pressed

1 medium zucchini, sliced

1 medium onion, chopped

1 teaspoon dried basil leaves

2 medium tomatoes, seeded, chopped

1 teaspoon dried oregano leaves

1/4 cup snipped fresh parsley

1/8 teaspoon dried oregano leaves

1/8 teaspoon ground black pepper

1/4 cup grated Parmesan cheese

 

Cook pasta according to directions; drain, keep warm.

In skillet, heat oil. Add garlic; stir-fry 15 seconds.

Add zucchini and onion; stir-fry 3 minutes or until

crisp-tender. Add tomatoes, parsley, basil, oregano,

salt and pepper. Gently cook; stir 2 minutes or until

thoroughly heated. Remove from heat; stir in pasta.

Sprinkle with cheese; serve immediately. Serves 6.
