I call them sunchokes and eat like I would jicama. I

usually dice and add to salads. I will chop in large

pieces and squeeze a little lime, cayenne (very

little) pepper and some smoked paprika and serve with

dinner. Or I add slices to sandwiches. They are also

good in an eggless egg sdalad or a mock tuna sandwich.
