Guest guest Posted November 20, 2007 Report Share Posted November 20, 2007 How can I determine the best way to prep beans? One friend told me all beans need to be soaked overnight. Another friend told me lentils do not need to be soaked. Someone told me to use only salt when soaking and my husbands boss said to use baking soda. I am rather confused. I like soup, but do not want to use chicken or beef stock. I read the ingredients and it seems like salt is the major ingredient. So can I just use plain water with my veggies and just add salt? I keep hearing about how you need to flavor soups, which is great, but I was thinking that I could manage that with herbs and spices. I would love to hear how others deal with this. I have not been able to read a lot of the recipe files so maybe this question is premature. My 4 year old niece is coming over today and we were going to make soup. All I do is bring a kettle of water to a boil, how much depends on how many beans, pour in the beans and shut the water off. Let it set for one hour and drain. It works! Barbara Barbara J.
