Add eggs; mix well. Stir in pumpkin, chocolate and vanilla; mix well. Combine dry ingredients; stir into pumpkin mixture until just blended. Stir in chips. Transfer to three greased 9x5x3 inch loaf pans. Bake at 350 for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans. Wrap and freeze for up to 6 months. Yield: 3 loaves ~ pt ~ / No warmth, no cheerfulness, no healthful ease, No comfortable feel in any member - No shade, no shine, no butterflies, no bees, No fruits, no flowers, no leaves, no birds - November! ~ Thomas Hood, No! Chocolate, spices and moist pumpkin? What's not to love, eh? *lol* The best part of this recipe is the size; it makes 3 large loaves so there are 2 to share and one to eat. Happy Thanksgiving to all! I have 10 large cans of pumpkin all ready to start baking more. Last week I made a batch and all the nurses at the rest home went crazy for it. It's also good with raisins and or walnuts.
