Cranberry, Apricot, and Clementine Relish

I found this recipe in a magazine at work the other day and think that

it sounds delicious. I am going to try it for Thanksgiving.

 

Cranberry, Apricot, and Clementine Relish

 

4c (1lb) fresh or frozen cranberries

1 (10oz) jar all-fruit apricot spread

1/3c golden raisins

1/3c sugar

2 clementine oranges

 

Put cranberries, apricot spread, raisins, and sugar in a food

processor. Grate 1 tsp zest from clementines and reserve. Peel

clementines and separate into sections, add to food processor.

 

Pulse mixture until relish is finely chopped Stir in reserved zest.

Cover and refrigerate up to 1 week ahead.
