Guest guest Posted November 14, 2007 Report Share Posted November 14, 2007 Nope its super simple to make. Heres the recipe and Im sure it would be fine if you substituted to make it vegan. Sweet Potato Souffle 3c mashed sweet potatoes 1c sugar 1/2tsp salt 1/2 stick butter melted (I used smart balance) 2 eggs 1/2c milk (I use soy) 1tsp vanilla Combine all ingredients until thoroughly mixed and place in greased baking dish. Topping: 1c brown sugar 1/3c flour 1c pecans or other nuts 1/3 stick butter, melted Mix the topping ingredients together and sprinkle over top of souffle.
