sweet potato souffle?

Is sweet potato souffle tricky to make? Must it be made right before

serving? We are keeping it pretty low key for Thanksgiving, but I'm

trying to think of an interesting twist for the sweet potatoes-my

personal favorite!

Nope its super simple to make. Heres the recipe and Im sure it would

be fine if you substituted to make it vegan.

 

Sweet Potato Souffle

 

3c mashed sweet potatoes

1c sugar

1/2tsp salt

1/2 stick butter melted (I used smart balance)

2 eggs

1/2c milk (I use soy)

1tsp vanilla

 

Combine all ingredients until thoroughly mixed and place in greased

baking dish.

 

Topping:

1c brown sugar

1/3c flour

1c pecans or other nuts

1/3 stick butter, melted

 

Mix the topping ingredients together and sprinkle over top of souffle.

Bake at 350*F for 30 mins.
