Guest guest Posted November 13, 2007 Report Share Posted November 13, 2007 Collards and Rice 2 cups vegetable broth 1 cup long-grained rice 1 tbsp.. butter 1/2 tsp. salt 3 cups loosely-packed chopped raw collards Seasonings of your choice, some minced fresh herbs are good Boil broth; add rice, butter and salt. Stir once, add collards by handful, stirring constantly. Cover, bring to a boil, reduce heat and cook until rice is done, about 20 minutes. Seasons to taste.
