Carnivore eats vegetarian dinner and lives, film at 11

Our carnivorous grandson spends the weekends with the other grandparents but

came home early last night because his other grandmother (who is also a good

friend) was not feeling well after her chemo session Friday. As usual he was

ravenous, but I was a bit frazzled since on weekends I don't make carnivore

meals and only had a big chickenless pot pie in the oven.

 

He is one of those kids who could eat pot pie four times a day and wanted THAT

pot pie. I didn't tell him it didn't have a speck of meat in it and he devoured

half of the entire pie, two halves of broiled grapefruit and a quarter of a

coconut cake.

 

Chickenless Chicky Pie (TNT)

(no exact sizes, tossed in what was on hand)

 

Two pie crusts (homemade)

Chickenless gravy, thick (cornstarch, water, butter, McCormick's poultry

seasoning (ingredients are: thyme, sage, marjoram, pepper, rosemary and nutmeg)

Carrots, diced, cooked, drained

Yukon gold potatoes, scrubbed, diced, cooked, drained

Frozen peas

Onion, diced, sauteed till translucent

Couple of hard-boiled eggs, diced

Sweet corn (just a little)

Pinto beans, drained and rinsed

 

Mixed the cooked veggies, drained (SAVE cooking broth!!!!!) Using the cooking

liquid, make a thick gravy. Toss eggs, beans and cooked onion in with veggies.

Add enough gravy to moisten but not float veggies. Pour into pie crust, top

with another pie crust. Flute edges, make several slits in top. Bake at 350*F

until golden brown and bubbling.

Note: Yukon gold and red potatoes hold their shape after cooking. Baking

potatoes like Russets often turn to mush. Except for the onion, peas and pie

crusts (which I made ahead of time and froze), the pie was made of leftovers -

recycled food?

 

Broiled Grapefruit (TNT)

 

Grapefruit, cut in half and sectioned

Brown sugar

 

Run knife around grapefruit and between segments to make eating easier.

Lightly sprinkle with brown sugar and broil until sugar caramelizes (does not

take long, watch it!)

 

I think I'll try sneaking in my zillion bean chili next weekend and see if
