Cherry Cordial Cake

My bf's 28th bday was Wednesday and I was out of town until Tuesday

evening. He wanted a Cherry Cordial type cake. I usually go all out

and make everything from scratch, but needless to say was beat after

the flight, working 12 days straight, and I had no time. Luckily,

the cake turned out FANTASTIC so I had to share. I will probably do

it from scratch next time, but it's so simple, easy and quick.

 

1 box Chocolate Cake mix (moist)

1 can Cherry Pie filling

1 Chocolate Frosting

1 tsp. Vanilla

 

Follow Chocolate Cake mix ingredient requirements but exclude the

water. For my mix it called for 1/2 C butter and 3 eggs (excluding

water), some call for oil instead of butter. Mix all ingredients and

bake per box directions. Note use a sheet cake pan for it. I made

the cake in my 9 " Springform and that was a bad idea due to it's

thickness (not runny like a usual cake bater can be)

 

It makes a very fluffy and flavorful cake and I think is a great base

if you want to jazz it up even more. Maybe adding chocolate chips

etc. or a layer cake with cherries and chocolate between the layers,

you name it! Anyways the cake was a hit with him and his very picky

family (of cooks as well) so the day was saved.

thanks for this one....so you just mixed the cherry pie filling into the cake

mix? my dh loves cherry chocolates and his birthday is coming up the week after

thanksgiving...this would be just teh thing and I can do it! YAY

Yes, it was super easy. Just one can mix it right in to the cake mix

with whatever else it calls for (except water). Let me know how it

goes over! I used a fudge chip frosting (with chips in it) and

everyone approved.
