Just wanted to double check - do the beans go in along with the tomatoes? Thanks & Peace, Diane Moussaka 1 pound eggplant, diced 1 large onion, halved and sliced 1/4 cup frozen apple juice 1 can garbanzo beans, drained and rinsed 1 can tomatoes, diced 1 garlic clove crushed 1 teaspoon ground allspice or to taste Place apple juice in non stick pan. Add eggplant, garlic and onion. Cook until onion and eggplant are soft and tender. Add tomatoes and allspice. Simmer until done, about 30 minutes. Serve with fresh whole wheat bread or pita.
