If you want to replace the binding effect of eggs in what you cook, you can use flaxseed. Grind up about two tablespoons and put it in 2 tablespoons of warm water and let it sit about 20 minutes. It will get gelatinous and slimy. That takes the place of two eggs. If it is scrambled eggs, then try our Scrambled Tofu " Eggs " in the recipe files. They are great. I've got one in there that is excellent and others do to. Look in the breakfast recipes. If you are wanting to replace eggs in a cake for instance, use the Egg Replacer. You can find it easily in most any health food store or online. And as far as substituting for eggs in cooking, probably you could find the different substitutes on some cooking site, like AllRecipes.com.
