Guest guest Posted November 10, 2007 Report Share Posted November 10, 2007 This from 'Biscotti' by Pappas 2/3 C pine nuts 1/2 C butter 3/4 C sugar 2 eggs 2 T lemon juice 2 T lemon zest (I had to leave this out) 2 C + 2 T flour 1 1/2 t baking powder 1/4 t salt Place nuts in shallow pan and bake at 350º for 6-8 minutes, until golden brown. Let cool. In mixing bowl cream butter & sugar until light & fluffy. Beat in eggs, lemon juice & zesst. In a bowl combine the flour, baking powder and nuts. Divide dough in half.On a gerased and floured baking sheet pat out into 2 logs about 1/2 " high, 1 1/2 " wide and 14 " long, spacing them at least 2 " apart. Bake in middle of preheated 325º degree oven for 25 minutes or until lightly browned. Transfer from baking sheet to rack. et cool 5 minutes. Place on cutting board and use serrated knife to slice diagonally at 45º angle about 1/2 " thick. Lay the slices flat on baking sheet, return to oven for 10 minutes longer, turning once. Let cool and store in tightly covered container.
