Guest guest Posted November 10, 2007 Report Share Posted November 10, 2007 Sharon, Quick OT questions for you. I find when I eat pure Vegan I get spells of hypoglycemia. I would eat brown rice, beans, veggies, fruits, nuts, grains and then get low spells often in the 50's range. Many times waking me up in the middle of the night too. Since then, I've added some cheese, egg, cottage cheese and small amounts of fish or chicken daily and they stop. I must say I do have to eat 6 mini meals per day and can only eat perhaps 1/2 c. cottage cheese and a bit of fruit or veggie at a sitting. Any thoughts? My hope was to remain vegan since I really don't miss the meat and really want to avoid it. My doctor said it should not matter whether my protein comes from a plant or animal source. My thoughts are perhaps since I eat so little at a meal I get a higher gram count of protein from animal sources that I would with an equal quantity of plant foods. Lately my favorite way to use tahini is to take a bunch of greens, such as chard or kale, chop it up (or rip into smaller pieces), and put it in a skillet with a clove of minced garlic and a bit of agave nectar (a healthier than sugar substitute - metabolizes more slowly than sugar - it's from a cactus), a bit of vinegar (a mix of apple cider vinegar and fig balsamic vinegar), and some veggie broth. Cook the greens in the small bit of liquid for a bit. (Cover if necessary or leave the lid off to evaporate some of the liquid if there's too much.) I leave on the stems on the greens and cook until they are al dente and the greens are... bright green. After it's done cooking, I mix in a spoonful of tahini, shake on extra fig balsamic vinegar and sprinkle on some black sesame seeds or raw pumpkin or sunflower seeds. YUM... yum. yum. yum. And SO healthy. Greens are full of protein (yup), calcium (yup) and loads of other vitamins and phytochemicals. :-) My secret to weight loss and to losing cravings to unhealthy addictive foods has been to eat plenty of greens EVERY DAY. :-) Oh, I've been asked to appear on a radio show about Defeating Diabetes next week. So I might not get this quite right, but Dr F believes that hypoglycemia is a symptom of detoxification. The advice I've seen (and some folks who previously were hypo say it works) is to have beans and greens with every meal, avoid starches, and limit dried fruits. And especially eat greens. Basically, the same advice I follow. But I am not a doctor. :-) You might want to check Eat To Live out from the library. He is also coming out with a book (or a booklet) on diabetes which will probably address hypoglycemia since they are related. Good luck!
