quick & satisfying dinner from last night

OK, last night i was looking for something new and healthy to feed the

family. Here's what I came up with:

 

1 package Fantastic Foods vegetarian split pea soup mix

1 lb. package Soyrizo (i finally found some at the new Earth Fare,

along with the low fat vegan faux chicken salad spread my daughter and

i love - yay!!!)

some organic " Better than Boullion " brand soup base

1 28 oz. can diced tomatoes, drained

 

simply prepare the mix according to instructions, EXCEPT instead of

water, use the soup base to make a boullion.

meanwhile, remove the casing on the soyrizo, and brown it in a skillet

with a little bit of olive oil, per directions

 

when the soup is about 3 minutes from reday-to serve, mix in the

soyrizo & the tomatoes

 

the effect is that the tomatoes get nice and hot without being

integrated into the soup as such. they retain heat and juice, so that

while you're eating the soup, each little bite of tomato is a juicy

warm palate cleanser -- YUM! maybe i'll have some leftovers for

breakfast (homer simpson drooling noise)

 

quick, easy, and a big hit wth all concerned. if you want to spice it

up a bit without overdoing it, i recommend some tabasco chipotle

sauce.

NP: well, it was Ornette Coleman (funny how something that scared

people to death 40 years ago sounds sweet and mellow now), but now

it's the Hives - Tyrannosaurus Hives! get things done around the house

music!!! dust bunnies FLEE, here comes ron with the vacuum in one hand

and a giant coffee mug in the other!!!
