Coyote Squash ...very yummmy

Hi all.

This is a variation of a shrimp and fish recipe that my mom makes . I

use coyote squash instead.

 

5 coyote squash cut in little cubes

1 cup of tomatoes cut in small pieces with the seeds

1 cup of onion cut in small pieces

1cup of cilantro chopped

1/2 cup of green onions

Olive oil, garlic ,salt, black pepper and hot pepper

and 1/2 cup of lemon juice

 

Clean the coyote by cutting in half and removing the white center of

it. Cut in little pieces or cubes ( not too thin or will desolve)

In a pan ,add olive oil, garlic, salt , pepper . Add the coyote

squash, tomatoes, onions, green onion ,1/2 cup of cilantro and the

1/2 cup of lemon juice. Take it to the fire and cook it in medium

heat til the squash is soft. If you see that there is not much liquid

add 1/4 of cup of water to it. When the squash is tender add the rest

of the cilantro and serve with rice. It is very good too served with

cuscous or grits.
