Being big kraut fans, I made some this past weekend with some changes. DH and I just loved it! Bear in mind, I am a convenience cook. I use organic frozen or canned products whenever possible. I hope you all enjoy it as much as we did. The sauerkraut flavor is really robust! Sauerkraut Soup 1-12 oz. bag frozen chopped onions 1 bag carrot matchsticks (12-16 oz.) 1 bag frozen peas 1-16 oz bag shredded cole slaw mix 4 cans beans of choice (I used 2 pinto and 2 great northern) 1 bag frozen white corn 5 full teaspoons chopped garlic 2 large jars sauerkraut 2-28 cans crushed tomatoes 2 quarts veggie stock 6 cups water (Added as soup cooks done and reduces) Put all ingredients in a large soup pot and simmer most of the day.
