You have a few weeks before the holiday, give it a try. What one person likes another doesn't. You might like to add some roasted garlic to the recipe to season it up. Now I'm curious. Guest guest Posted December 1, 2007 Report Share Posted December 1, 2007 I've done this, Melissa. I prefer it to the more fattening kind; it's much smoother and creamier, believe it or not. However, it works best if you use silken tofu. If that's not available, you must use soft tofu. Anything more firm would ruin the texture of the mashed potatoes. If you like your mashed potatoes lumpy, just add lumps of potato; you don't want the lumps to be lumps of tofu... not in this recipe.
