Guest guest Posted November 5, 2007 Report Share Posted November 5, 2007 African Peanut Soup 2 cups chopped onions 1 Tbs. olive oil 1/2 tsp cayenne pepper (or to taste) 1 tsp grated ginger root 1 clove garlic, minced 1 cup chopped carrots 2 cups chopped sweet potatoes 4 cups vegetable broth 2 cups tomato juice 1 cup smooth peanut butter 1. Saute' the onions in the oil until just translucent. Stir in cayenne, garlic and ginger. 2. Add the carrots and saute' a couple more minutes. 3. Mix in the sweet potatoes and broth, bring to a boil, and then simmer until veggies are very tender. 4. In blender or food processor, pure the veggies with the cooking liquid, tomato juice and peanut butter. 5. Return to pot, heat till warmed through. Taste soup and adjust to your taste. Notes: I used fresh ginger and added some extra. I used an emulsion blender and add the peanut butter before the tomato juice so it could melt in. I made this for a dinner party, made it the day before and re-warmed it the night of the party. As I think all dishes with tomato get better as they sit. Added nicely to the flavor and made it a hearty soup.
