Vegan cupcakes

My husband just gave me Isa Chandra Moskowitz's cupcake cookbook, Vegan

Cupcakes Take Over the World.

 

I tried the first two recipes, and all I can say is she's certainly

taken over this household. I made the vanilla cupcakes with vegan

buttercream frosting and the chocolate with chocolate buttercream

frosting. They're really tasty and very easy to make. The only warning

I'd give is that she uses more icing than my North Carolina relatives

ever dreamed of, and anyone who's ever had a cake made by a Southerner

knows that they take icing seriously. One recipe of the frosting was too

much for two dozen cupcakes. But too much of a good thing isn't so bad.

Just make 4 dozen cupcakes so you can use all that frosting.

 

As soon as we recover from our icing overdose, I'm going to dive right

into the carrot cake cupcakes with vegan cream cheese frosting.

The vanilla & chocolate ones are good! The thing I liked about the vanilla

recipe was how the vanilla flavor really stands out. I haven't made any in a

few weeks. It's time to start baking again,lol!
