This is an easy recipe to play around with. I bet some finely chopped carrots( use a mandoline) and tomatoes would be good added to this before you fry it. Eggplant patties Roast or boil, large peeled and diced eggplant and then mash 1 med. onion, diced 1/2 cylinder of Crushed saltine crackers 1 egg 1/2 t. garlic powder or 1 clove minced garlic 1/2 t. salt 1/2 t. Ms. Dash 1/4 t. coriander Add some Italian Breading Crumbs to make to a nice consistancy Sometimes we would add about 1/2 c. of leftover rice. Mix everything together. Form into patties and fry in a little oil on both sides. Makes a nice sandwich patty. I need to make these again soon. I had forgotten all about them until you asked.
