This is my variation of a recipe from a diet I tried along time ago and I really like, so I thought I'd share. If you try it, make sure you use a good brand of flax oil. I personally like Barleens, but Spectrum is not bad either. Flax Oil Mayo 1 egg 1 tbsp apple cider vinegar 1/2 tsp dry mustard 1/4 tsp garlic powder (optional) 1 tbsp lemon juice 3/4 cup flaxseed oil Using either a handheld immersion blender or a small food processor, beat the first 3 ingredients on low for about 5 seconds. Then slowly add 1/2 cup of flaxseed oil on low until emulsified. Next add lemon juice and the last 1/4 cup of flaxseed oil and blend until creamy. Notes: The original recipe called for 1 cup of flax oil, but I find it gets plenty thick with 3/4 cup. You can add any other spices you like, I have made cumin/chili powder, oregano/basil/garlic, curry mixes. Just depends on what you want to use it for.
